The conversion from gas cooktop and electricity to induction cooking is not so forthcoming. One of the hindrances in the widespread popularity of induction cooking is the peculiarity of the induction cooking itself. Induction cooking is effected by the electromagnetic induction which heats up the vessel. However the vessel should be ferromagnetic like cast iron or copper in which the electromagnetism can be induced. Another major handicap is that the vessel must have a flat bottom so that it remains in contact with the cooktop. Pots and curved pans cannot be used with induction cook tops. However new and better cooktop are entering the market which has a curved base so that pots and curved pans can also be used for cooking.
